Our best friends Diep and Taylor came over last weekend with their son Jackson. He is just as active as Ms. M, which makes me so happy because it means - I'M NOT ALONE. Maddie had an atypical bout of shyness and spent much of the time in our laps (ahhhh, finally, a chance to snuggle). I made a brunch that came out part delicious (mmm. Pancakes!) and also not so good (eew, watery quiche).
This is a delicious recipe for pancakes modified from Gourmet cookbook. They are a wonderful way to start a Sunday morning. Mmmmm.
1 cup milk (they recommend whole, but I used 1% and it was good)
2 large eggs
3 Tb plus 1/2 tsp vegetable oil
2 Tb unsalted butter, melted and cooled
1 cup all purpose flour
4 tsp baking powder
4 tsp sugar
1 tsp salt
1 1/2 cups blueberries
Whisk together milk, eggs, and 2 Tb vegetable oil in a medium bowl, then whisk in butter.
Stir together flour, baking powder, sugar, and salt in another bowl. Whisk in egg mixture until just combined. Mix in blueberries.
Make pancakes as you usually do. Delicious!
